Craig McDonald (winemaker) said one of his goals since taking over the reins at Hillebrand was to put Sauvignon Blanc on the Hillebrand map. Sure the first Trius version put out in 2009 was a hit, but Craig wants to expand the portfolio of this grape. This bubbly that was 12 months on lees with a barrel fermented dosage of 2010 wine has classic Sauvignon Blanc character. Nose of grassy and citrus notes followed on the palate with a leesy, citrus and grapefruit pith. It’s crisp, clean fresh and lively – quite a different breed from your standard everyday sparkler.
