A few years back, Cave Spring released their first ever Dolomite Riesling (named after the limestone bed the grapes grow in) and it was beautiful with pure expression of mineral and fruit … Somewhere along the road between that first (2006) release and this one, the Cave lost their way with this wine (probably due to an overly hot 2007) – but I’m happy to report that with the release of the 2008 version, the Dolomite Riesling has returned to form (or its roots so to speak). The nose is loaded with minerally-grapefruit aromas, the palate shows that steady seam of crisp minerality with peach, citrus nose and a dry finish that has you constantly sipping to quench, but when left alone it produces a lovely and lengthy finish that seems to sweeten the longer it sits undisturbed on your tongue.
