This Cab spent a total of 30 months in a mix of equal parts French and American oak (70% older barrels) and it delivers on every level a good Cabernet Sauvignon should. Aromas start with a big hit of baker’s chocolate backed by plum and cherry … palate seems to mimic the popular Appassimento-style (but isn’t); winemaker Marc Bradshaw attributes that to his longer than normal hang times – big cherry, plum, chocolate along with smoke and spice hit the palate like a whirlwind causing a craving for more. A truly delightful Cab from the hot 2012 Ontario vintage. Price: $23.95 – Rating: ****+
