One of the ‘F’ wineries in Niagara (Flat Rock or Featherstone) started the crown-cap trend on sparkling and it seems to be catching on, all the way to Prince Edward County, where Lighthall has picked up the mantle on is his first traditional method bubble. 100% Chardonnay aged 4 years on lees delivering dry, lemon and lessy-yeasty notes with dusty apple, mineral and melon rind flavours.
