An interesting blend of Cabernet Franc (40%), Pinot Noir (35%) and Baco Noir (25%) – which I secretly wish it didn’t have – of which 25% of the fruit was dried (hey, it’s an Italian winery in Ontario afterall); then it spends 10 months in all new French wood, with oxygen introduced to accelerate ageing. The result: balsamic and cassis notes with a tart palate and vanilla-caramel on the finish … it’s very Italian in style and a pleasure with the pizza made on the property.
