I'll admit the first year of Calcaire was not my glass of wine, but this time I think Normy has nailed it. It's a blend of Chardonnay, Riesling, Pinot Gris and Melon de Bourgogne co-fermented to show off the clay and limestone soils in Ontario ... it spends 2 months on lees and uses "field yeast" (aka: wild fermented). This is one mineral driven concoction with lots of grapefruit pulp and pith and jowl jangling acidity along the lines of lemon juice or verjus ... the word is zesty in an acidic kinda way.
