Chablis and oak don’t always go together but here 30% of the wine sees 6-8 months in 500L barrels to avoid over oaking and giving the wine a little extra mouthfeel; that restrained use of oak has given the wine subtle vanilla nuances along with apple, bosc pear, honeydew melon and mineral notes; wonderfully sippable – a fine effort for this young winery (established in 2014).
