2017 Tasting ... It seems like everyone is making bubbles in Niagara these days, so when one jumps out you really take notice … and out jumps this Fielding 84% Pinot Noir / 16% Chardonnay 12 months on lees version from the ranks of all the wines at Cuvee 2017; this might possibly be the best bubble ever made with a Fielding label on it.  Between the toasty-raspberry aromas; the strawberry-raspberry palate; the delicate delivery on the tongue and the pop of cherry on the finish – all while staying true to a dry rosé with great acidity …it’s a sparkling worthy of a multiple purchase and any celebratory event – like say Friday.  Price: $29.95 – Rating: **** ½
