Hinterland is located in Prince Edward County and is currently the County’s only all sparkling house. Alright, so maybe not all, but 90% of their production involves bubbles. They grow all their grapes to be part of the sparkling stuff (12 acres worth): Pinot Noir, Chardonnay, Pinot Gris and some Rielsing – and they’ll be making Rosé, Blanc de Blanc, Blanc de Noir and a Cremant d’Alsace style (Riesling / Pinot Gris). Etoiles is a real star; it’s a 60/40 Pinot Noir/Chardonnay blend with a 10ml dosage of Cabernet Franc, so it has a slightly peachy colour. 17 months on lees in bottle and all made from 3 year old vines. Apple and citrus take center stage here with nice minerality and good acid balance, there’s even a slight sweetness to the finish. This is definitely a house to watch, especially if you’re a bubbly fanatic. Price: $39.20 – Rating: ****½
