Who knew that the lowly L’acadie could make such a serious wine? Steve Byfield put his thinking cap on to make this one, treating the Blanc almost like you would a Chardonnay with 16 months in older French oak barrels, which has brought out hints of vanilla with apple and pear fruit, plus a plethora of citrus notes (lime and lemon) that adds complexity and balancing acidity … it’s quite Chardonnay-esque and that makes it all the more impressive.
