The winery is located in a small hamlet called “Gamay”, a place between Puligny-Montrachet and Saint-Aubin. This Saint-Aubin Chardonnay sees lees contact for 36-48 hours, then into barrel for 11 months (20-30% new) – the lees remains on the bottom of the barrel (no stirring) to keep the freshness of the wine intact while still adding complexity to the finished wine: apple cobbler and spiced peach lead things off, there’s also a rich, buttery texture on the mid-palate which leads to a spice finish.
