Vincenzo D. has changed his Chardonnay recipe once again, and this time he's getting closer to hitting the mark. A mix of wild and inoculated yeast, all sur lie and with battonage daily - plus a mix of French and Bulgarian wood. Sounds like a lot of work for 120 cases of wine, but he's made what I believe to be his best Chardonnay to date: buttery yet with good acid balance; hints of vanilla and butterscotch, caramel apple, sweet peach and a beautiful length to the finish. He claims his 2020 is even better- but for now he's on the right path with this 2019 edition. Price: $40.00 – Rating: ****
