Hillebrand 2012-Tasting NV Trius Brut
This is not my first tasting of the Hillebrand Brut, nor will it be my last – but it’s my first in quite some time from the winery directly, usually I’m pulling out a bottle from my own stash that has been lying around a few years. This two years on lees bubbly (expanded from 18 months under Craig's watch) is made up of 50% Chardonnay, 45% Pinot Noir and 5% Pinot Meunier and is still a lovely domestic sparkler at an amazing price, and now we have the added complexity of 6 months. Creamy apple to its core with good fruit and wonderful acidity. Because this wine is made in the non-vintage style the wines used are most likely from 2006-2010 … but however it’s done it leaves a long lingering finish that’s sure to please, especially for the price.
