Willow Springs 2005 Baco Noir
This is not the full, hearty, foxy Baco we’ve all come to expect from this grape. Nor is this a clone of the 2003 version … Willow Springs continues to experiment with it’s homegrown grape to see what can be done with it. There version of Baco is lighter and more fruit forward than most, this is due to the limited amount of skin contact between the skins and the juice, which they minimize to a few days instead of weeks or months. This time round, the colour is inky black and has a great black cherry nose with smells of cedar and sandalwood to back it up. In the mouth, there is some sweet oak flavoured cherries with, surprise-surprise, cedar and sandalwood. There really is no surprise, it tastes like it smells, and that is a good thing. It also has a medium-short finish. This Baco can be served with a hint of a chill (an hour or two in the fridge before serving) and proved to be very good with turkey and stuffing as well as heartier meals and BBQ.
