Twin Pines Cidery 2008 Iced Cider
There are two ways to make iced cider, one is by letting the apples freeze on the tree (a la icewine), the other is to stick the juice in a freezer after having harvested and pressed it at the usual time. “We chose the latter because we didn’t like the results we got from the tree frozen version,” said Mike Vansteenkiste, one of the owners of Twin Pines. I won’t bore you with the process, but I can tell you that fermentation takes about a year and is done at about 34 degrees Fahrenheit. The sweetness of apple goodness comes through in every sip.
