I’m glad you asked … Here’s a Syrah from Wismer-Parke Vineyard (yes, Niagara fruit) that Jonas wild ferments and lets it rest in 600L French oak barrels for one year … it comes out in textbook Syrah fashion: meaty and spicy with black fruit, a la black cherry – the exciting part is that smoked meat and peppered-raspberry/cherry finish. So the answer to your previous question, can he do anything else, is a resounding, YES!
