2018 Tasting … while the wine is non-vintage on the label this is the “new batch” on the shelf. This one blends wines from three vintages (2011 / 13 & 14), rests them 2 ½ years on lees, as well as barrel fermenting the wines from ’13 & ’14 … all of it Chardonnay … if you’ve tasted Dan’s Stardust you know he can make awesome bubbles, but to call Ceremony its baby-brother is to diminish this wine – it’s just fresher (with less time on lees) apple, lime and fresh biscuits that at times seem croissant or brioche like in their richness – plus there’s great acid backing. Don’t wait for a special occasion to open this wine, it requires nothing more than a Friday and the 'ceremony' will be opening it up.
