This 50/50 Pinot Noir / Chardonnay plays homage to the sanctity of marriage, where two parts come together to make a whole. Five-and-a-half years on lees in the traditional method – so the same bottle you buy it in – the grapes are both co-harvested and co-fermented and if the marriage goes well it’ll be seamless and integrated – and this one is: this baby is pure mineral from the get-go plus apple and lemon drop moving to lime on the finish. The acidity is on point, the lees notes of baked bread and brioche are stand-outs, while the finish is clean, fresh and medium in length.
