Megalomaniac 2016 Cabernet Sauvignon Reserve

When you get to make Cabernet Sauvignon in Ontario you best not “f” it up, and for a guy who just started working with it in 2015 that goes double. 2016 was a great year for Sauv and so Sebastien Jacquey let it hang and picked it late to get the most out of it. 18 months in 35%  new French oak and a whopping (for Ontario) 14% alcohol: mocha, cherry, and chocolate kick things off here before spiced-plum slips in … it’s a silky smooth and sexy wine that’s supple in all the right places, maybe even a bit jammy, but let’s give it some time to integrate (say 2 years) and revisit it because it’s bound for greatness, of that I am sure. Drink 2020-2027.
