A wine to try early and often to watch it change through its lifespan. It spent 12 months in 7 oak barrels: 2 new 225L barrels, 1 new large format and the rest “neutral”. The resulting wine is a big oaky wine backed with butter, caramel/butterscotch, peach cobbler and spice. It’s a wine that’s more California-esque than Ontario-focused, but that tell-tale Canadian acidity helps bring it home – it’s a fat luxurious Chardonnay for those Chard-lovers who dig that style.
