Ryan Monkman calls this cider because he can, but those expecting effervescence best think again – it’s more apple wine than cider but with a twist: the all-county fruit is aged in 2nd fill French oak barrels for 6 months and primarily fermented using “very” wild yeast … nice gentle apple flavor.
