Lots goes into the production of this wine: it starts with a one-third wild ferment, 100% malolactic fermentation and the zero percent new oak – because it’s Prince Edward County fruit the pre-requisite minerality is most definitely there, plus it has a nice mouth-filling weight: lime meringue, apple cobbler, spice and a lovely creamy texture rounds out the profile.
