Single vineyard, single block of Chardonnay that is hand-harvested and fermented using both wild and cultured yeast - then aged in 1000 L and puncheon barrels for 10 months. While the wine went through full malolactic fermentation it still retains nice balancing acidity for those fresh apple and peach flavours ...
