Big Head’s first Gamay is a carbonic number that is made from “what the vintage dictated”, according to the biggest head of them all Andrzej Lipinski. Destemmed skins were added back into the juice for colour and tannin but kept fresh by the maceration method. Then it was aged 4 months in Terra Cotta vessels – the result is a wine with nice intensity and freshness: dried strawberry and white pepper mixed with a lightly smoky character.
