I’ll be honest with you – as I always try to be – I never think of Cave Spring when I think of Pinot Noir, but over the last few years my view has started to change. The ’07 Estate was wonderful and now this Dolomite version is also something special. It’s feminine in its appeal – lovely sour and ripe red cherry mingle in the glass like old friends at a party … smooth on the palate with a mineral component that only adds to the enjoyment and then the acidity comes along and sweeps everybody into the next room to allow more guests to arrive (take another sip).
