Strip Room is a Merlot (60%) - Cabernet Franc (40%) blend made in the kiln drying method pioneered here in Ontario by roving winemaker Andrezj Lipinski. The Franc is all fresh (undried fruit) while the Merlot saw 16 days of kiln-drying with 9 months of ageing in mostly older barrels. Cedary notes with red cherry, cinnamon and hints of vanilla.
