This wine is an absolute monster of a Chardonnay combining the power of fruit from California and the acidity of cooler climate Ontario. Aromas start out toasty and oaky before giving way to vanilla and caramel-apple. Palate has all the weight, richness and succulence of a hot climate Chardonnay delivering ballsy fruit, caramel apple, toffee and toast with an underlying spice ... but just when you're ready to give up on it as just another monster Chardonnay that's over-oaked and overly fruited along comes this wave of acidity that refreshes the finish and has you begging for another sip. This wine just keeps on giving sip after sip. It's interesting to note that this wine took over a year to ferment, so it's the one Thomas B lost the most sleep over, but is the most proud of.
