Sometimes you want simple, other times you want complex - then there are those times when you need time. This Cab Sauv, from the hot, short crop 2005 vintage is one of those latter wines. Big, smoky, oaky and black fruited with a heavy tannin punch; this one will need some time to come around, but when it does, you'll be glad to have a few bottles around for special occasions that involve meat.
