If you're a Riesling fan then Cave Spring has got to be one of your destinations of choice in Niagara ... every year they bring out between 6-7 different Rieslings to appeal to a whole range of palates, each wine has it's own style and character ... this is the more mineral driven and balanced of these wines. In a year like '09 when acidity was off the hook Cave Spring harnessed it just right in the bottle. The nose sings with apple, pear and peach fruit along with good minerality and lemon zest aromas.
