The County is slowly turning into the Ontario go-to region for making good, consistent sparkling. This is the follow-up bubbly to the wonderful 2006 and it shows that Frederic's (Picard, winemaker) previous efforts were no fluke. Even out of the crappy-ass glass I tasted it one could get the yeasty-biscuity-toasty-baked apple smells and flavours with a lovely caramel apple linger on the finish ... and the mousse filled the glass, no matter how crappy-ass. Two years on lees and limited production ... very tasty. I used this wine to celebrate Canada Day on the road and when poured for family the wine got my father-in-law's approval (can't get a higher rating outside the country than that).
