This is the first sparkling to come out of the house that Tawse built. It's traditional method bubbly made for 100% Chardonnay, sourced from the David's block, and aged on lees in bottle for 30 months. It's still a young pup but it gives off a bready nose with russet apple backing. The palate is bread crusty and apple tart - but where this wine truly shines is on the finish: bread crust, apple skin and lime zest that lasts an extra, extra, extra long time. I was prepared to give this wine a three-and-a-half-plus star rating but that finish pushed it to a very solid four. Be interesting to try this wine in a few years when it has had time to settle ... there are, or so I am told, still a few bottles in reserve that will remain undisgorged in the Tawse Cellar for a while longer.
