They say Nova Scotia might be the next Champagne, and if Benjamin Bridge has anything to say about it, that might be true. Beautiful mineral / salty like quality on the palate with biscuit and bracing acidity; crisp with lemon, lime and green apple playing on the palate. Put it beside a traditional Champagne and even the most ardent fan of the French might be fooled.  Price: $44.50 - Rating: ****+
