The “raw” line of wines have basically the same specs: no filtration upon bottling, whole cluster fermentation, which is done in concrete, no oak introduced, all natural fermentation and yeasts – the only manipulation here is the 100% appassimento (drying) of the grapes raising the alcohol to a whopping 15.6% - but here it works, delivering sweet plum, cherry, leather, mocha and bittersweet cocoa to balance that seam of sweet fruit; the finish is the real surprise here, fresh and lively with bright mouth cleansing acidity. It works on every level – and I’m a sucker for a wine that does that, you should be too.  Price: $65.00 – Rating: **** ½
