This is a big, wild ferment, 7 month in new Slavonian oak, full malolactic fermentation kind of Chardonnay made from Hunter Vineyard’s 37 year old block of Chardonnay, designated as VQA Niagara Lakeshore … the “big” is just what you’d expect, lots of caramel, butterscotch and vanilla – but there is also peach, apricot and apple (mostly in some form of cobbler), but then in swings some citrus note (that’s the acidity) to keep the wine from being over-the-top and blousy; after all this is Ontario, and we’re known for freshness in Chardonnay, right?
