As a person who finds Pinot Gris boring I’m always glad to see when a winemaker tries (and succeeds) in upping his game on Gris. Colin Stanner does just that with his “cuivre” – allowing the grapes to spend 3 days on skins and then on lees for 10 months – the skins give it that pink-ish / coppery colour and those lees create a richer mouthfeel with more complex flavours like watermelon, cherry, apricot and lime with a great clash of mineral and acidity on the finish … I love this kind of out of the box thinking with Pinot Gris especially when it succeeds.
