One of those “wow” wines that brings its A-game right off the hop; Cabernet Sauvignon doesn’t always ripen well in Ontario but 2015 was one of those good years and is considered a “short crop” because of two very cold winters in a row – so only the strong survived to make it through. Twenty-four months in mainly new French oak and the first thing to hit you is the layer upon layer of spice mixed in with mocha and black cherry – the wine is still a little tight but will open with another 2-plus years in bottle and it’ll be one of those wines you’re drinking with confidence in 2025.
