A traditional method sparkling spending a mere 8 months on lees to retain freshness. 73% Pinot Noir / 27% Chardonnay and colour-wise this just barely hits the threshold for rosé with its coppery colour. Lovely dryness in the mouth with lime, unripe strawberries, subtle pith and nice biscuit notes interwoven throughout.  Rating: *** ½+
