It's been a while since I've tried the Dolomite Brut, this Chardonnay based sparkling is a mineral driven affair which spends a minimum of 30 months on its lees in bottle (traditional method) the results are a floral (read: apple blossom) creamy version of bubble that is reminiscent of a flaky buttered biscuit across the tongue coated with apple compote and finishing with a bite of lemon and mineral acidity. Well priced, great for those who really dig on mineral and acid based sparklings. Price: $27.95 - Rating: ****
